moulin turkey with damsons

Serves  8

 

INGREDIENTS

  • 8 turkey breast fillets, cut in half

  • 150 ml apple juice

  • 90 ml soya sauce

  • 90 ml dry sherry

  • 3 garlic cloves, skinned and crushed

  • 2 tsp chopped fresh thyme or 1 tsp dried thyme

  • butter

  • 12 damsons or plums, halved and stoned

  • Pepper

  • 1 tbsp chopped parsley

METHOD

  • Place turkey in a large shallow dish and pour over the apple juice, soy sauce, sherry, garlic and thyme.  Cover and leave in the refrigerator to marinate about 4 hours or overnight.

  • Remove turkey from marinade, reserving marinade.  Heat butter and oil in a large frying pan and quickly fry the turkey until browned on both sides.  Add damsons or plums, reserved marinade and pepper to taste.

  • Cover and simmer gently for 10-15 minutes, until tender, stirring occasionally.

  • Serve with green beans and boiled or mashed potatoes.
