moulin bean and onion tart

Serves 6. Often served as a starter.

 

INGREDIENTS

  • 1 large onion

  • Olive oil

  • 125 g grated cheese

  • 1 teaspoon mustard powder

  • 1 egg

  • 150 ml milk

  • 125 g cannellini beans, soaked, cooked and drained or a 425g tin of haricot jeune

  • 1 tbsp chopped parsley

METHOD

  • Preheat oven to Gas Mark 6, 190°C

  • Line a flan dish with the pastry base, prick and bake in the oven until golden (about 15 mins).

  • Chop onion and fry in olive oil for about 10 mins until soft.

  • Mix together cheese and mustard.

  • Beat the egg and mix with the milk, season with salt and pepper.

  • Put the hot onion straight onto the cooked pastry base, arrange the beans on top and then the grated cheese and mustard mixture, pour over the egg and milk.

  • Sprinkle with chopped parsley and bake for 40-50 mins until golden brown and set.

  • Serve hot or cold.
